So today is Monday. It's the one day of the week that I have help at home with Lucy so I can head to the office for some heavy-duty (focused) work.
In order to get the most out of my day, it's the day that I try to be committed to getting dinner into the slow cooker before I head out the door. It makes re-entry so much less painful!!
Today is going to be MACHACA MONDAY!
Slow Cooker Machaca
3-5 pound beef roast - my fav is cross rib
1 onion, cut into eighths
1 15-ounce can diced tomatoes
Chopped green chiles - to taste
3-4 potatoes, scrubbed and quartered
Lemon pepper
Kosher salt
Fresh ground black pepper
Season roast well with the salt, pepper and lemon pepper. I like to brown the seasoned roast along with the onion over the cooktop before I toss it into the crock pot.
Place the roast and onion into the slow cooker. Push to one side, and place the quartered potatoes in the open space. Dump in the green chiles and the can of diced tomatoes. Fill the tomato can with water and pour over the top. Set the crockpot to cook on low heat for 8 hours. Upon conclusion of cooktime, adjust seasonings. It'll be great served with fresh tortillas and a green salad.
Voila! I'm outa here. And I'll be mom of the year when I walk back through the front doors this afternoon...
